Creamed Beets with Rice

Recipe from the Great Depression

3/4 cup of Rice
4 cups of Milk
3 cups of Dice Cooked Beets
4 tablespoons of Butter
4 tablespoons of Flour
Salt and Pepper

Cook the rice with 2 cupfuls of milk and 3/4 tablespoonful of salt.
Make a white sauce by melting the butter, stirring in the flour, salt and pepper to make a smooth paste and adding 2 cupfuls of cold milk. Stir until boiling begins, and cook 2 minutes. Add the beets to the white sauce and reheat if necessary. Place the hot mixture in the middle of a platter.
Around the edge arrange the hot rice in a ring or in mounds or in shapes made by packing into greased molds and baking for 3 minutes in a hot (450 degrees) oven.

Note: Beautiful color, use for festive occasion.
