Recipe from the Great Depression
2 pounds Round Steak 1/2 inch thick
4 slices stale Bread
3 large Carrots
5 outside stalks Celery
1 Onion
1/2 pint Peas
1 strip Bacon
Salt to taste
Soak the bread in water. While it is soaking put all the vegetables except peas through food chopper. Mix thoroughly with soaked bread, which has been squeezed dry, and season with salt.
Mix peas in gently. Lay steak flat and place dressing in the center with the bacon strip on top.
Roll the meat around it and fasten with skewers or tie securely. Roll in seasoned flour and sear quickly in hot frying pan.
Add 1/2 cupful hot water, cover and cook slowly 2 hours in moderate oven.
Place on hot platter and remove skewers or string.
Thicken gravy with a little flour and boil a few minutes.
Serve with the mock duck. This will serve six.
