About Dehydrating Drying preserves food by removing 80 to 90 percent of the water.  Destructive microorganisms can’t thrive without moisture and find the more highly concentrated sugar and acid environment inhospitable.  Home dried foods shrink to one-sixth to one-third of their original bulk, depending on the food.  The following fruits are good candidates for drying: apples, bananas, apricots, cherries, figs, grapes, plums, peaches, and pears. Vegetables that may be successfully dried include corn, lima beans, snap beans, celery, carrots, herbs, mushrooms, peppers, pumpkin, sweet potatoes, and tomatoes, although tomatoes can be tricky. Dried meat or Jerky is possibly the favorite dehydrated snack food and is by all means the most economical done at home. All dried foods should be stored in a cool, dark place in tightly covered containers and checked periodically for spoilage.  Keeping time for dried fruits and vegetables is up to three or four years, although as with other foods, nutritional value is highest during the first year after processing.  Be sure to label your food and date it.
