2 tablespoons of drippings (bacon grease) or oil
3 cups of cooked pinto beans, drained
2 eggs
4 scallions or one small onion, sliced thin
In a blender, puree beans with eggs, pour into a bowl. Stir in the scallions. Pour 2 tablespoons of the batter into a hot frying pan containing drippings. Fry 2 to 3 minutes then turn, fry till golden.
These are good as a side dish with meat or as a main dish for a light meal with salad.
Substitution:
One medium onion = ¼ cup of dehydrated onion
